The final day of the Erasmus+ STAY project learning event took us to Agri Elter, a family-run organic olive farm nestled in the hills of Monte Pisani. Since 1979, the Elter family has produced high-quality, bio-certified olive oil. With over 6,000 olive trees and an on-site mill, the farm manages the entire process, from tree to table.
Farmer Francesco Elter, a graduate in agroforestry and food science, impressed participants with his deep knowledge, dedication to sustainability and emotional connection to the land. His personal approach and technical expertise are reflected in every drop of oil, a true blend of heart, science and tradition.
Later, we were joined by Chiara Mignani (University of Pisa) and Gianluca Bovoli (Strada dell’Olio dei Monti Pisani), who presented a model for collaboration between academia, agriculture and tourism. Their discussion focused on how wine and olive oil districts help strengthen rural identity, product quality and community-based tourism.
The group also visited Agriturismo Luggiano near Vinci, where owner Francesco Lippi shared his vision of sustainable hospitality rooted in local traditions. Guests there can enjoy wine tastings, vineyard tours and a peaceful rural stay in beautifully restored Tuscan apartments.
The day highlighted the power of education, collaboration and passion in building resilient and authentic rural experiences.
