Depuis 1979, la famille Elter produit une huile d\u2019olive certifi\u00e9e BIO de haute qualit\u00e9. Avec plus de 6 000 oliviers et son propre moulin, l\u2019exploitation contr\u00f4le l\u2019ensemble du processus, de l\u2019arbre \u00e0 la bouteille.  <\/p>\n\n<p>L\u2019agriculteur <strong>Francesco Elter<\/strong>, dipl\u00f4m\u00e9 en agroforesterie et sciences alimentaires, a impressionn\u00e9 les participants par sa connaissance approfondie, son engagement en faveur de la durabilit\u00e9 et son lien personnel avec la terre. Son approche humaine et son expertise technique se retrouvent dans chaque goutte d\u2019huile, v\u00e9ritable alliance de <strong>passion, de science et de tradition<\/strong>. <\/p>\n\n<p>Plus tard, <strong>Chiara Mignani<\/strong> (Universit\u00e9 de Pise) et <strong>Gianluca Bovoli<\/strong> (Strada dell\u2019Olio dei Monti Pisani) ont pr\u00e9sent\u00e9 un mod\u00e8le de collaboration entre universit\u00e9, agriculture et tourisme. Leur intervention a montr\u00e9 comment <strong>les zones viticoles et ol\u00e9icoles<\/strong> renforcent l\u2019identit\u00e9 rurale, la qualit\u00e9 des produits et le tourisme local. <\/p>\n\n<p>Le groupe a \u00e9galement visit\u00e9 <strong>l\u2019Agriturismo Luggiano<\/strong>, pr\u00e8s de Vinci, o\u00f9 le propri\u00e9taire <strong>Francesco Lippi<\/strong> a partag\u00e9 sa vision d\u2019un accueil durable enracin\u00e9 dans les traditions locales.
